Where’s the Love for Lubbock, Waffle House?
Over the last few weeks, we have talked about Braum’s possibly coming to town and Heff’s Burgers opening a second location. And while I am VERY excited about both, I have one simple question: Where's the love, Waffle House?
The closest Waffle House to Lubbock is in Amarillo. And while I do like going to Amarillo, I can’t make a trip to Amarillo every time I am craving a pecan waffle.
After making a call to Waffle House Corporate, I found out the company has no intention of opening a Lubbock location anytime in the near future. That said, I decided I should write an open letter to Waffle House about why they SHOULD open a Lubbock location sometime in the near future.
Dear Waffle House,
We have always had something special. Remember the first time I walked into your beautiful Grapevine location in 1998? It was love at first site, and you know what they say, you never forget your first love.
How is it a town the size of Lubbock does not have one of the most beautiful, elegant quick serve breakfast restaurants in the US? I thought you would follow me anywhere I went. What have I done to forsake your delicious pecan waffles? Have I offended you by not expressing enough interest in your famous chili? Was it that night I was caught at Denny’s? I swore I would never forget you, and I haven’t, but I think you have forgotten me.
Whatever the reason, I am truly sorry and beg for your forgiveness. If you would come to me I would feel like we could have a new beginning together. It would be like the first time we met. I have never forgotten you. You will be my scattered, smothered, covered, chunked, capped slice of sweet heaven. This is what God intended. This is True Love. Please come to me and let me love you and your rich coffee again just like the first time.
