One of the best things about the weekends is waking up late and making yourself a killer breakfast. I'm not much on the whole country style with eggs, a pound of bacon and biscuits smothered in gravy. And pancakes covered in whipped cream and syrup is way to heavy for this boy in the morning. I spent the weekend with some friends recently and my buddy's wife got up and graciously made the boys breakfast. French toast was on the menu and I am sorry, but I think the prisoners in the Lubbock County Jail may of had a better tasting meal than we had!

As a fat guy, let me turn you guys onto "Big's French Toast" It will change your life. Yep, it's that good.

There are two secrets to the perfect french toast. The bread you use and my secret ingredient... Spanish vanilla.

Here is what you will need:

2 room temperature eggs

1/2 cup of heavy cream

4  thick slices of day old French Bread - lay out the night before. (You can also use a good rye bread if you like that little savory flavor with your sweet)

1 1/2 teaspoons of Spanish Vanilla- (Not vanilla extract or something you get at WalMart. You need the  real deal imported Spanish vanilla you can get at Market Street or specialty shops. Trust me its worth the trouble to have the good stuff.)

1/4 cup of sugar and cinnamon mixed

A pinch of salt

REAL BUTTER! - Get something good, not the imitation. Splurge a little.

Heat skillet on Med-Hi (Hot enough to crisp the bread and low enough to not burn the butter.)

Mix your eggs, cream, salt and vanilla in a shallow bowl.

Soak your bread for 20 seconds on both sides

Add a fat hunk of butter to your skillet. (It should melt quickly and sizzle a little.)

Throw in your soaked bread (Do not touch it for a while. Let it cook and get golden brown and crisp, then flip and do the same to the other side. You may need to add more butter to your skillet.)

When the toast is all crispy and hot, nice and buttery... Lay one side of the toast on top of your sugar and cinnamon mixture. The butter will soak up the combination. Serve and get ready to think "Holy S!*t"

Another way to serve it is to remove from skillet. Put a little more butter on one side and add just a little bit of real maple syrup and dust with powdered sugar.

Couple slices of crispy bacon and a little fresh fruit and you are ready to rock!
