Lubbock has seen more than it's share of new taco shops open (and reopen) over the past few months. And, on Milwaukee Avenue in the old Hungry Howie's location, Roberto's Taco Shop is getting ready to open their doors.

We first wrote about Roberto's new Lubbock location back in February and were in the area again today, so it seemed like the right time for an update on their progress.

The first thing I noticed is that they now have their business hours clearly posted, along with a copy of the menu and a fat guy in the reflection of the window who clearly cannot wait for his first Carne Asada Burrito. The same burrito that garnered acclaim for Roberto's from the one and only Mayor of Flavortown, Guy Fieri.

They are also looking to staff up as they get closer to the grand opening.

According to their sign, they're in immediate need of Prep Cooks, Line Cooks, and Cashiers. I hope that this doesn't prove problematic, especially since so many restaurants are practically begging for employees here in West Texas. There's no shortage of jobs, especially in the fast food industry in our area. yet, eateries are complaining of a lack of qualified candidates who are willing to work.
