I spent my college days inside bars of course but I was taking not placing orders. I worked for two years at the Texas Cafe (The Spoon) here in Lubbock while I finished up my time at Texas Tech and with the smokers and grills going every day we had a lot of time to perfect our recipes and sell them on special occasions.

Every Monday night this burger that I came up with was demanded by the patrons. You can cook it indoors or out (I prefer outside grills) and the slower you can go the better. So if you are going to smoke a brisket or a pork roast this weekend make up 4 of these bad boys and let them go, low and slow right next to your other holiday favorites.

The Big's OMG Burger:

1 lb of 97% lean Hamburger

1/2 lb of  ground Pork

1 Yellow Onion finely chopped

1 Bell Pepper finely chopped

1 Minced Clove of Garlic

1/2 cup Fresh minced parsley

2 Jalapenos (according to taste)

1/2 tsp Red Pepper flakes

1 egg

Panko Breadcrumbs

6-10 slices of Apple-wood Smoked Bacon

Cheese of your choice

Sourdough Bun

Mix all the ingredient in a bowl. Add your egg and  breadcrumbs last. You are looking for the consistency of meatloaf. Not too wet and not to dry. Should make 6 huge 1/2 lb patties. wrap each patty with a slice of the bacon and secure with a tooth pick then poke a hole through the entire patty with your finger.You can top patties with Worcestershire, cover them with plastic wrap and let them marinate for 1-12 hrs whatever you have time for.

That is it. Place them on the smoker (depending on heat) for 4hrs or until center is mellow pink or fire up the charcoal grill and have them ready in 30-45 minutes. Melt you favorite cheese on top and enjoy.

Mix a little horseradish and mayo with salt and pepper and you have a great sauce for this monster. Maybe some Green Chills or sauteed Onions, whatever you like! Just don't forget the Ice Cold Beer!
