The Sign Is Now Up for the One and Only Jimmy’s Egg, Opening Soon in Lubbock

The one and only Jimmy's Egg is set to open soon here in Lubbock at 114th and Quaker Avenue, not far from the South Plains Mall.

Jimmy's Egg is opening up at 6253 Slide Road in the old Rockfish Seafood Grill location. We've been anticipating this opening for a while and are glad to finally see a sign up.

The franchise started 35 years ago in Oklahoma City, founded by a Vietnamese refugee named Loc Le. You can review their menu and try to decide what to order; they do breakfast and lunch. It may take some time, however, because there's so much to choose from and it all looks and sounds great.

In addition to their website, they're busy inspiring hungry breakfast lovers everywhere on Twitter and Instagram.
