Did you know that Chili’s Grill & Bar started with modest ambitions in Dallas, Texas?

On March 13, 1975, founder Larry Lavine opened the first Chili’s in a converted postal station on Greenville Avenue in the Vickery Meadows area of Dallas.

Lavine, inspired by Texas's chili cook-off culture after attending the inaugural Terlingua Chili Cook-Off in 1967, aimed to create a casual, full-service restaurant that offered hearty and affordable fare.

Early Success and Aggressive Expansion

Chili's did not find overnight success.

In 1983, Lavine sold Chili's to Norman E. Brinker, a restaurant veteran associated with the Pillsbury restaurant group.

Under Brinker's leadership, the brand experienced aggressive expansion.

Brinker International continued to innovate the Chili's menu, introducing items such as fajitas and baby back ribs, and expanded the brand across the U.S. and internationally.

Currently, the Chili's brand consists of over 1,600 locations in numerous countries.

Midland-Odessa and the Local Chili's

While the Chili’s brand was born in Dallas, its influence and presence now stretch deep into West Texas.

Midland hosts a Chili’s location at 2100 Loop 250 Frontage Road, offering customers menus with Tex-Mex flair, signature margaritas, happy hours, and familiar crowd-pleasers.

Odessa also has a Chili’s, located along E 42nd Street.

Chili’s local branches embody its origins by offering a relaxed dining experience with Southwestern and Tex-Mex options tailored to Texas tastes.

In Midland-Odessa, Chili’s competes with local favorites while serving families, professionals, and travelers seeking consistent quality and service.
