The Company
We are pretty proud of our friend Wes Wicker and his company "Big Wick's". Wicker started his business by funding his way through college by selling jalapeno jelly. This eventually morphed into jalapeno glaze that is marketed under the Big Wick's name. His product can be found in a bunch of area specialty stores, and got a mega-boost by being shelfed at United Supermarkets. The glaze is a "sweet-heat" which seems to be all the rage these days, so the timing for this product is perfect. Wicker has also added some seasonal releases such as peach, prickly-pear cactus, strawberry, and cranberry for limited runs.
The Discovery
It seems having one foot in the food business led Wicker to another discovery, that there weren't really any Ranch mixes taking advantage of a nice smoky jalapeno flavor. Even though he swore he'd never enter the BBQ world of dry rubs or spices, this discovery kind of transcended that personal oath.
How To Use
First off, this is not a rub, unless you want it to be. The product can be mixed with mayonnaise and milk or buttermilk to make a straight up salad dressing. You can use it with sour cream to make dip. Then, the product shows it's true versatility because you can shake it directly on pretty much anything from meat to popcorn. Like Big Wick's glaze, the product has all the jalapeno flavor, but just enough heat to let you know it's there.
